A workshop with chef Rui Mota to share experiences of molecular gastronomy around the idea of water sustainability. Recipes, techniques and tastings will be presented, based on practices of water conservation that can be adopted at home or in restaurants.

Rui Mota is a chef and teaches molecular gastronomy, mixology and gastronomy. As part of a master's degree in Gastronomic Sciences, he developed experiments in food design, psychophysiology, astrophysics, food production and neuroscience. Currently, he studies and experiments with organic food and questions of sustainability in Portugal.
